A Beautifully Bizarre Dinner for the Bold and Adventurous | Thoughtful Food, Providing Food for Thought at Callicoon Hills in their Conover Restaurant.
Join a cocktail hour featuring a bounty of local meats, cheeses, and crudités, followed by a 6-course menu of unusual and rarely used cuts and game meats, seeds and stems made delectable by Chef Jean-Paul Medina. The dinner includes wine pairings, cocktails, and uncommon desserts.
Offal dining focuses on the nourishment the livestock and gardens provide. Eating nose-to-tail, along with seeds and stems, these dishes celebrate what, traditionally, is discarded.
Seats are limited and only for those brave, intrepid diners ready to take a leap into culinary madness!
